Chili powder

  • 1 tablespoon ancho chile powder* or paprika
  • 1 teaspoon oregano
  • 5/8 teaspoon cumin
  • 5/8 teaspoon garlic powder
  • 5/8 teaspoon cayenne pepper
  • 1/3 teaspoon onion powder

*I used pasilla chile powder because that’s what I had, and it resulted in a quite spicy blend. If using that again, I’d skip the cayenne.

Yellow curry powder

  • 2 tbsp ground coriander
  • 1 tbsp whole cumin seeds
  • 1/2 tsp black cardamom seeds
  • 1/2 tsp green cardamom seeds
  • 2 tsp ground pepper
  • 1 1/2 tsp whole mustard seeds
  • 1 1/2 tsp ground tumeric
  • 2 tsp whole fenugreek seeds
  • 1/4 tsp ground chili
  • 1/8 tsp ground cloves

Makes 5 to 6 tablespoons.
