Homemade hot pockets


Basic Whole Wheat Bread recipe from Laurel’s Kitchen Bread Book for the dough and instructions found in From Scratch Hot Pocket Dough instructions

Process notes

  • made the default double-loaf recipe
  • used hard read wheat
  • divided dough into 12 pockets
  • used three different fillings:
    • egg, cheese, sauteed spinach, sauteed mushrooms
    • roasted broccoli, roasted sweet potatoes, roasted carrots, caramelized onions, cream cheese
    • sauteed spinach, sauteed mushroom, tomato sauce, mozzarella
  • did not use the egg wash


The dough worked perfectly for this use and they were all delicious! They weren’t the white-flour, crispy style like you buy in the freezer section, but rather were soft and wheaty. Each pocket was rather large and was quite a bit of bread compared to the filling, so next time I’d make more smaller pockets. Try the egg wash next time because these looked very dry even though they didn’t taste dry.
