- used 8 oz hard red wheat, 8 oz hard white wheat
The dough was too hydrated and stuck to the parchment paper. In general, my current batch of basic, inexpensive parchment doesn’t seem to be working well. I had better luck with a roll of silicone-coated parchment. The loaf turned out quite flat (compared with other times I’ve made this recipe) which could be the home milled wheat and/or too much water.
