After much research and internal debate, I finally took the plunge and bought a grain mill for my kitchen. It’s really easy to use and baking with freshly-milled flour makes me feel so much better about what I’m eating.
Part of my research was a trial run with some whole wheat from the Great Harvest Bread Company, who sells the flour they mill in their shop by the pound. I settled on vanilla cupcakes and they tasted phenomenal — although have you ever had a bad cupcake?! After that success, I was sold.
My goal for 2014 is to use whole grain flour milled at home for virtually everything I bake. I’m sure there will be the occasional supplementing with some all-purpose white flour, but this will be the exception not the rule. My list of things to make includes yeast breads, quick breads, and various sweets.
The first grains on my list to buy are hard white wheat berries, soft white wheat berries, and rye berries. And there’s no shortage of recipes on deck.
